Recipes

Here are some easy - and fun - recipes put together with kids in mind! If the child is old enough, let them do some of the work. They'll love it! If they're not old enough to cook themselves, they'll love some of the fun presentation.

Here are the recipes we have today:

FROSTED PRETZELS

1 can (16 1/2 oz) vanilla frosting 15 pretzel twists

1. Measure 1 cup frosting. (Refrigerate remaining frosting for another time.)

2. Heat the 1 cup frosting in top of double boiler over hot water until frosting is liquid, stirring occasionally. Remove from heat. (Keep the top of the double boiler over the hot water.)

3. Dip 15 pretzel twists into the frosting with your fingers, then place them on waxed paper. Let dry 8 hours.

Makes 15 pretzels

BANANA PANCAKES

2 medium ripe bananas 2 cups biscuit baking mix
1 egg 1 1/3 cups milk
1 tablespoon sugar, honey or currant jelly.  

1. Heat griddle over medium heat or heat electric griddle to 375. Grease the hot griddle with shortening if necessary.

2. Mash enough of 2 bananas in small bowl to measure 1 cup.

3. Prepare pancakes as directed on baking mix package - except after mixing fold the 1 cup mashed bananas and 2 tablespoons sugar into the batter with rubber scraper.

4. Continue as directed on package. Serve with honey or jelly.

Makes about 18 pancakes

CHICKEN-BACON-LETTUCE-TOMATO SALADS

2 celery stalks 2 cans (5 oz. each) boned chicken
1/3 cup mayonnaise 1/2 tsp. instant minced onion*
1 snack-sized pkg. potato chips 4 lettuce leaves
Imitation bacon 2 medium tomatoes

1. Wash 2 celery stalks and pinch off leaves. Chop the celery into 1/4 inch pieces.

2. Empty the chicken into colander to drain. Break the chicken into chunks with fork and empty into bowl.

3. Stir in the chopped celery, 1/3 cup mayonnaise, and 1/2 tsp. instant minced onion. (Soak onion in equal amount of water for 3 to 4 minutes before adding.)

4. Crush potato chips in the package firmly with your fist or with a rolling pin, being careful not to open the bag. If you don't have a snack-sized package of chips, crust enough chips to measure 1 cup.

5. Wash 4 lettuce leaves and pat dry with paper towels. Place 1 leaf on each salad plate.

6. Spoon the salad onto the 4 lettuce leaves, dividing it evenly. Sprinkle with imitation bacon.

7. Washand cut stem ends from 2 tomatoes. Cut each into 8 wedges. Arrange 4 wedges on each salad.

DOGS AND CHEESY MAC

4 cups cooked elbow macaroni 3 Tbs. butter or margarine
1/2 cup onions, chopped 2 Tbs. flour
Salt to taste 1 can evaporated milk
1 cup grated American cheese 1 cup grated cheddar cheese
4 sliced hot dogs 2 Tbs. bread crumbs

1. Sautee onions in butter for about 3 minutes. Stir in flour and salt.

2. Blend in evaporated milk. Cook mixture over medium heat.

3. Stir in macaroni and hot dog slices.

4. Place in a casserole dish. Sprinkle with bread crumbs.

5. Bake at 350 for 40 minutes.

HAMBURGER FAKE CAKE

1 1/2 lbs ground beef 1/4 cup chopped onion
1/4 cup water 1 tsp. salt
1 tsp. soy sauce 1/4 tsp. pepper
Instant mashed potatoes (4 servings) 1 1/3 cups water
1/3 cup milk 2 Tbs. butter
1/2 tsp. salt Catsup & mustard (squeeze bottles)

1. Heat oven to 350. Mix the ground beef, 1/4 cup chopped onion, 1/4 cup water, 1 tsp. salt, 1 tsp. soy sauce, and 1/4 tsp. pepper in bowl with fork.

2. Place the ground beef mixture in ungreased pie pan and shape into a round mound (like a cake). Bake in 350 oven 45 minutes.

3. Five minutes before the hamburger is done, prepare the mashed potatoes for 4 servings in saucepan with fork as directed on the package.

4. Remove the hamburger from the oven. Lift to platter with pancake turner. Frost with the mashed potatoes using a spatula.

5. Decorate the top of the frosted hamburger cake with the catsup and mustard.

GELATIN CRITTERS

2 envelopes unflavored gelatin 1 pkg strawberry-banana gelatin
1/4 tsp. ground cinnamon 1 1/2 cup boiling water

1. In medium bowl stir gelatins together with a fork.

2. Stir cinnamon into boiling water until dissolved.

3. Add water to gelatin and stir until dissolved.

4. Pour into an 8" or 9" square pan and chill about 2 hours until firm.

5. Using 2" to 3" animal cookie cutters cut out shapes.

These gelatin critters do not melt at room temperature. Makes 8 servings. Try using hearts, diamonds, and whatever holiday cookie cutters you have on hand, too!

DRESSED BANANAS

1/2 cup sugar 1 Tbsp. flour
1/4 cup vinegar 1/2 cup water
Dash of salt 1 heaping Tbsp. peanut butter
Bananas Crushed nuts

1. Mix these ingredients in order given: sugar, flour, vinegar,water, salt, peanut butter, bananas and peanuts and cook over medium heat to thicken. Cool.

2. Dip bananas (cut into 1-inch lengths) in dressing and roll in crushed nuts.

TEDDY BEAR SUNDAES

Your favorite flavor of ice cream M&Ms or other small candies
Sm. round chocolate or vanilla wafers Chocolate sprinkles or toasted coconut

1. Put a scoop of ice cream into dish for the head.

2. Use candies to make eyes and mouth.

3. For ears, push cookies into top of ice cream.

4. Sprinkle chocolate sprinkles or toasted coconut over the top for the hair.

NO BAKE CHOCOLATE OATMEAL COOKIES

2 cups granulated sugar 1/2 cup milk
2 Tbs. cocoa 1/2 cup margarine
1/4 tsp. salt 1/2 cup peanut butter
3 cups quick cooking rolled oats 1 tsp. vanilla

1. In large saucepan mix sugar, milk, cocoa, margarine, and salt. Bring to a boil over medium-high heat and boil one minute.

2. Remove from heat and add peanut butter and stir until dissolved. (You can use smooth or crunchy peanut butter)

3. Add oats, stirring in one cup at a time. Add vanilla and mix well.

4. Wait 2-3 minutes, and then drop batter by teaspoonfuls on waxed paper or aluminum foil. Cool.

Makes 5 dozen cookies
